You step out of the minivan at Zourva, 550 m above sea level, and the air has that sharp, resinous bite of cypress. The path vanishes into a steep throat of shade; pine needles and loose limestone click beneath your boots as the ridge pulls you uphill toward a spring at 1,050 m and a ragged gap in the horizon that frames the gorge of Tromarissa.
