You step off the minivan into a narrow mountain mouth where the creek narrows to a corridor of dark rock and rushing water. The guides clip on harnesses, hand you a helmet, and the canyon begins: three clean waterfalls, plunge pools polished by decades of flow, and a constant hiss of moving water that dares you onward.
