The tale of kombucha

It started centuries ago in the mountains of China, where tea masters discovered by chance what happens when you ferment sweet tea with a special culture of bacteria and yeasts. Here lies the origin of kombucha. Kombucha has since been praised for its rich and complex flavour, fresh and slightly effervescent. But there is more to this drink than its flavour alone. During the fermentation process, probiotics are created that aid our digestion and health. And so it is a story of patience and transformation. From tea to something new, from ancient recipe to modern discovery. Each bottle tells the story of time done its work, of nature allowed to take its course.

What does the Kombucha Workshop look like?

Upon entry, we will have some of our own kombucha ready to taste for you. We'll then start the workshop with a slice of theory about making kombucha: about the responsible microbes (known as SCOBY), about the fermentation process, what are the right conditions for the fermentation process, hygiene, troubleshooting, flavouring your kombucha and bottling.

On site, you will brew your own tea base that you will inoculate with the SCOBY (aka the starter liquid). You will take this kombucha base home to ferment into your first batch of kombucha within about 10 days under the right conditions. With this base, you can keep brewing for as long as you want. You will also learn how to put your kombucha on pause if, for example, you go on holiday or have a little less time for brewing. You will then bottle a kombucha we brewed and flavour it with a flavouring of your choice that we have at hand. You take this kombucha home and can drink it after just 2 days.
