You step off the subway into a humid Seoul evening and the scent of charcoal meets you before the street sign does. Inside the small Mapo grill, a ring of raw egg circles a metal pan while thick-cut pork belly sizzles and a fretful, glossy strip of galmegisal — pork skirt — chars at the edge. The guide talks quietly about sauces and seating order as a barmaid slides over ceramic cups of makgeolli and ice-cold lager.
