You step out onto a sun-warmed sidewalk and the harbor smells of salt and fried taro; Nouméa’s shoreline pushes the city forward, inviting a slow, deliberate walk. The self-guided audio tour threads through broad avenues, past the gothic angles of St. Joseph’s Cathedral, and down to the city market where voices, spices and ocean-sprayed air compete for attention.
