You step aboard the Quicksilver Activ 675 as the old city walls of Dubrovnik recede behind you, their ochre stone shrinking against the open Adriatic. The sea pulls you toward a scatter of green islands — pines leaning to the wind, limestone cliffs scoring the horizon, and small coves that exist only by boat.
