A low-slung Cap Camarat slides off the wooden dock and the lagoon opens like a glassy road. Salt and coconut oil hang in the air as the skyline of Mount Otemanu recedes and the water takes center stage, shifting through turquoise and aquamarine. In minutes the boat eases into shallow coral gardens where plate corals, butterflyfish and the occasional blacktip reef shark weave between bommies.
