A low-slung wooden bar sits on stilts a quarter-mile offshore, waves nudging its pilings as brown pelicans circle and fishermen call out across a turquoise shelf. On arrival the ocean becomes a shallow stage — you step from the fishing boat into waist-deep water, salt on your skin and a cold Red Stripe within reach.
