A slow dawn lifts off the roofs of colonial Paraty and the water answers in silver ripples as your guide clips on the kayaks. You push from the small Paulinho kiosk and the town slides away — islands and mangrove fingers appear, each one daring you ashore. By midday the bays hold warm, clear water and Praia Vermelha waits with cabins only accessible by sea.
