The lights of Dubai unfurl as the dhow slips away from the quay, wooden hull creaking softly while city glass and palm-lined embankments reflect into the canal. Onboard, the buffet steam and the murmur of conversation set a relaxed rhythm as the boat threads the New Dubai Canal toward the waterfall bridge and the silhouette of Burj Khalifa beyond.
