At the Mendes Ranch Corral, the day begins with the low whinny of horses and the easy confidence of the paniolos, Hawaii’s legendary cowboys. As you mount your steady horse, the verdant pastures of Maui stretch before you, alive with the gentle rustle of tropical winds and calls from distant peacocks. The trail leads upward, following the rim of Waihee Valley, a lush chasm carved by volcanic forces over millennia, its cliffs dripping with waterfalls visible on the distant horizon.
