You step out of an air-conditioned minivan onto sun-warmed stone and the canyon answers with a cold breath of spring water. Kourtaliotiko Gorge narrows ahead, limestone walls streaked with dark veins and small waterfalls that dare you to follow the sound of running water. The walk to the falls is short but physical—rocky trails, shallow river crossings, and a sudden cooling hush beneath Mediterranean pines.
