A wind-whipped dust road opens out beneath a wide Taurus sky as the convoy rumbles away from Side, tires crunching over shale and scrub. The jeep ride pushes up into the folded limestone of the Taurus Mountains, where pine slopes slope into steep ravines and the reservoir’s green water cuts a cool line across the valley. You feel the machine beneath you working with the land — jolts, climbs and a few hairpin switchbacks — while the guide points out a ruined aqueduct or a village house framed in walnut trees.
