The stairwell smells faintly of oak and peat as you step into the low-ceilinged warmth of a historic Edinburgh pub. Conversation hums; a storyteller at the front gestures between crystal nosing glasses while the light from the street slices through mullioned windows. Whisky in Scotland grew from local farm distilling and later industrial-scale production; pubs like the Waverley Bar have long been social hubs where distillery tales and smuggling legends are exchanged.
