Perfect Pinch Dumplings offers a hands-on culinary workshop in Park Slope, Brooklyn, at 248 Prospect Park West, steps from Prospect Park’s tree-lined loop. Over two hours, participants learn to shape and cook boiled, pan-fried, and steamed dumplings, build dipping sauces, and taste sake guided by Skurnik Wines & Spirits. The class is compact—maximum 15 people—so instruction is personal and tempo stays lively.
The lesson opens with appetizers and a short demo in a commercial kitchen, where a row of stainless stations, rolling pins, and mounds of dough make the room feel workmanlike and intimate. Instructors teach wrappers by hand, demonstrate pleating techniques for gyoza and bao, and coach timing for a crisp-bottom pan fry, a gentle steam, and a clean boil. That focus on technique is paired with flavor: mix-ins range from classic pork and napa cabbage to vegetarian fillings with shiitake and chives, while the dipping-sauce segment shows salt-acid-bitter balance. A guided sake tasting follows, pairing rice wines to different textures and sauces—useful for anyone curious about pairing beyond wine.
This experience is more than a class; it’s a local food ritual. Located in Brooklyn’s Park Slope neighborhood, the meeting point sits on the edge of Prospect Park, designed by Frederick Law Olmsted and Calvert Vaux in the 1860s, whose mature oaks and sycamores frame prewar brownstones. That proximity means students can arrive via a short walk through park greenery, turning the trip into a neighborhood outing.
Why book this trip? Small size, professional kitchen facilities, and the sake pairing elevate a typical cooking lesson into a cultural crash course. The hands-on format demystifies dumpling craft while the instructors’ focus on texture and timing leaves you able to replicate techniques at home. The tasting from Skurnik Wines & Spirits is a standout—an approachable introduction to sake that complements the food lessons.
Practical notes: classes require closed-toe shoes and tied-back hair; arrive a few minutes early for snacks and check-in.
