You start before dawn, the 4x4 growling onto a red dirt track as the coastline slips away behind you. At 700 meters, Mont Koure opens like a bowl: wind pushing through open scrub and a 360-degree view that makes the first coffee taste sharp and earned.

Pickup is offered from hotels in Nouméa or a provided address; departure is at 7:00 a.m., so be ready in time for collection.
