Lassithi Plateau has been farmed for centuries; its wooden windmills once irrigated hundreds of hectares and the plateau’s villages preserve traditional crafts and communal ovens.
Tour operators emphasize low-impact visits — stick to paths, avoid taking plants, and support local producers to keep small-scale agriculture viable.
