A pre-dawn van eases out of San José and the road opens into a patchwork of coffee terraces and sugarcane fields. Fog lingers low in the valley as the guide points to the back flank of Poás Volcano; by midmorning you’re stepping onto a narrow rainforest track where water is the constant companion — a ribbon of streams, sudden cascades and, eventually, deep pools whose colors shift from turquoise to deep blue.
