Experience the art of traditional pasta making from scratch, using just your hands! Learn to create classic shapes like trofie and malloreddus, then savor your creations tossed in a rich pesto. Enjoy a delightful meal at the chef’s table, complete with a digital recipe pack to recreate the magic at home.

Roll up your sleeves and try the traditional technique of pasta making using just your hands – no fancy equipment required!

Discover the key to making a classic semolina dough that any nonna would be proud of. Master mixing, get the kneading know-how, then pick up some seriously good shaping skills.

What you’ll do:

  • Get twisting to make trofie, roll up a few pieces of malloreddus and try your hand at strozzapreti. Experiment to the max, then whip up a batch of your favourite shape.
  • Watch as your chef whips up an Italian pesto with plenty of Parmesan, fragrant basil and creamy pine nuts.
  • Then cook your hand-shaped pasta to perfection. Gently toss it through your pesto with freshly-grated Parmesan and precious pasta water to create an iconic dish that’s hard to beat.
  • Take a seat at our chef’s table to tuck into your finished dish.

What you’ll eat & drink:

  • Traditional semolina dough
  • Liguria-style trofie
  • Sardinian-style malloreddus
  • Emilia-Romagna strozzapreti
  • Pesto alla Genovese
  • A complimentary glass of bubbles on arrival (or a soft drink, if you prefer)
  • Water is provided throughout and you’re welcome to purchase wine, beer, spirits & mixers, cocktails and softs from our drinks menu.

What to expect:

  • Easy-to-follow demos, led by our expert teaching chef.
  • Tuck into your fresh hand-shaped pasta around our chef's table (or pack a box to take home, if you prefer).
  • A digital recipe pack with everything you need to recreate the magic at home.
  • All ingredients, equipment and aprons will be provided.
  • You’ll work in pairs to recreate the dishes at your cooking stations.

Additional info:

  • Can be adapted for vegan and vegetarian diets. Unfortunately, this class is not suitable for gluten-free diets.
  • You don’t have to be part of a pair to book. If you’re flying solo, you may be paired up with another person.
  • The duration of the class includes teaching demos and hands-on cooking, as well as time to tuck into delicious dishes at our chef’s table.
  • Only those who are actively taking part in a class are permitted at the Cookery School. Sadly, we are unable to accommodate spectators or provide a waiting area for friends and family.
