We're making eclairs!

We are Mad about Choux pastries! In our Mad About Choux Pastry class, you will learn the finest choux pastry recipes and the secrets to the classics that you can recreate at home. You have no doubt already tasted them whether as a savory cheesy gougère a cream-filled sweet eclair - yes, that's right the eclair is part of the choux pastry family as is the famous Paris-Brest and Gateau Saint-Honoré, and the decadent Profiterole. This is also the dough used to make the choux for the French wedding cake, the "Croquembouche" or "Croque-en-bouche". With this base, the sky’s the limit with what you can create – you may even invent your own choux dessert or apéritf, who knows! We will focus the class on the creation of 4 to 5 choux pastry recipes, including the chocolate ECLAIR!

It was in 1540 when one of Catherine de Medicis's pastry Chefs came up with the recipe for Choux pastry or " Pate à Choux ", in French, it became an instant classic French recipe across France and Italy and an essential dessert still today at French weddings with the phenomenal "pièce montée", for example.

In our Mad About Choux Pastry class, you will learn the finest Choux pastry recipes and the secrets to the classics that you can recreate at home. With this base, the skies the limit with what you can do with it - you may even invent your own choux dessert or apéritf who knows!
