Are you ready to discover the secrets of scrumptious, homemade plant-based ravioli? Imagine silky smooth pillows of pasta filled with flavor explosions that will make your taste buds dance, topped off with sauces that transform every bite into a culinary experience. This workshop will take you on a taste journey that will change your cooking skills!
We begin our culinary journey with the secret behind perfect pasta: the flour. Discover what types of flour Italian chefs use, learn about the differences in degrees of milling and decipher the mysterious terminology on packaging that sometimes confuses even experienced home cooks. Next we look at fillings for ravioli and matching sauces: what makes a good ravioli filling in terms of taste and texture, what sauces go well with ravioli? Think of the classic Burro e Salvia and Ragù but also modern exciting options like a tomato-miso butter or a nice delicate sauce based on reduced vegetable juice. Next, our passionate chef demonstrates the making and processing of pasta dough into ravioli.
Then it's your turn to shine! In pairs, you will work on making your own pasta dough, a ravioli filling, you will fill your own ravioli and you will make a matching sauce. The highlight? Once we go to the table there will be 4 different types of raviolis and side dishes on the table and we will taste and enjoy them together, while enjoying a good glass of wine or one of our homemade kombuchas.
