As we will be concentrating more on building your skills and learning recipes involving techniques in this French bistro cooking class, the menu will be selected by the chef before you arrive in class. Under the guidance of your chef, you will cook and feast upon a 3-course menu of French bistro classics served with plenty of bread and wine. While we will not be visiting the market in this class, all products used will be picked out by the chef and will be fresh and seasonal as always.

The chef will be with you every step of the way as you work together to prepare the meals and plate your dishes to look as good as they taste. After learning how to cook your bistro meal you will of course get to enjoy all three courses with wine as a sit-down meal with your chef and classmates.

The menu will vary by season, in 2025 we have the following:

Winter Homage to Julia Child (December- February):

In winter, we celebrate Julia Child, the culinary icon who brought French cuisine into homes worldwide. Starting with soupe à l’oignon, where you can “cry like Julia” as you chop onions. You’ll also learn the classic beef bourguignon, a dish she called “certainly one of the most delicious beef dishes concocted by man“.

  • Soup a l’Oignon (French Onion Soup)
  • Bœuf Bourguignon (French Style Beef Stew)
  • Gratin Dauphinois (Dauphinois Potatoes)
  • Tarte Tatin, Crème Fraîche (French Apple Tart with Cream)

Spring Homage to Paul Bocuse (March-May)

This spring, our bistro cooking class honors the legendary Paul Bocuse, lovingly known as “Mr. Paul,” who shaped Lyon’s culinary heritage. He famously organized a contest to find the best Oeuf Meurette in Lyon, a dish deeply tied to his roots. The menu also features veal blanquette à l’ancienne, celebrated as France’s favorite dish.

  • Oeuf en Meurette (Poached Eggs in Red Wine Sauce)
  • Veal Blanquette à l’Ancienne (Old Fashioned Veal Stew)
  • Rice Pilau
  • Classic Crème Brûlée

Summer Homage to Jaques Pepin (June-August)

This summer, our bistro cooking class pays tribute to Jacques Pépin, a chef whose legacy is rooted in celebrating the art of French cuisine while making it accessible to all. Each dish on this menu reflects the values Pépin championed: timeless techniques, respect for tradition, and the joy of sharing good food.

  • Salmon Tartare with Green Salad
  • Steak au Poivre (Sirloin Steak with Black Peppercorn and Cognac Sauce)
  • Pomme Darphin (French Potato Pancake)
  • Strawberry Melba with Tuile Wafer Cookies

Autumn Homage to Alice Water (September-November)

Autumn brings a bistro cooking class inspired by Alice Waters, the trailblazer of the slow food movement and advocate for seasonal, sustainable dining. Panisse, Provençal chickpea fritters, shares its name with her iconic restaurant, highlighting her love for rustic, regional French cuisine. You’ll also enjoy a rich chocolate mousse paired with her renowned almond tuile recipe.

  • Escargot with Garlic Parsley Butter
  • Cod Back with Dieppoise Sauce
  • Panisse (Provençal Chickpea Fritters)
  • Chocolate Mousse with Almond Tuiles
