The sky over Cappadocia ignites before you step outside: pastel balloons inflate like giant paper lanterns, then lift slowly as the valley wakes. You stand on a hotel roof with a cup of strong Turkish tea, the air cool and the rock formations—fairy chimneys, towers, honeycombed cliffs—suddenly tiny below a drift of color. That first sunrise balloon flight is the fulcrum of a three-day sweep through volcanic plateaus, subterranean cities and centuries of carved stone.
