The air in central Cancún tastes of char and citrus: vendors flip tortillas over hot comales while the crowd around Plaza 28 hums with bargaining and laughter. On a private Cancún Taco Trek you move with purpose through stalls and family-run kitchens, sampling tacos that range from thin-sliced cochinita to spit-roasted al pastor, each bite anchored by a squeeze of lime or a spoonful of house salsa.
