Behind the Stills: Guided Distillery Tour & Tasting at The Spirits Workshop Christchurch

At the edge of Sydenham's low-slung industrial blocks in Christchurch, The Spirits Workshop opens its doors for a Distillery Tour that demystifies whisky and gin. Over a focused 1.5-hour walkthrough, you'll stand beside gleaming copper stills, enter a barrel store saturated with oak and time, and listen as the team traces each spirit from grain or botanicals to glass. Meet at 11 Sandyford Street, Sydenham, Christchurch 8023, where the lane gives way to a working cellar door and the smell of ageing spirit greets you like a promise.

This is not a staged exhibit but a working distillery experience. The key features are the pot and column stills, the racked barrel room, and the tasting bar where distillers guide sampling of their whisky and gin lineup. You'll learn about mash bills, botanical blends, distillation cuts and the patience required in oak maturation. The barrel store itself becomes a landscape of amber: rows of ex-bourbon and virgin oak casks, each emblazoned with dates and lot marks that tell a slow story of oxidation and wood interaction.

What makes The Spirits Workshop a standout in Christchurch's outdoor-adjacent recreation map is its raw, accessible craft. Sydenham's industrial character, once factories and warehouses, now hosts artisans and small producers; this distillery leverages that heritage to create an authentic cellar-door encounter. The tour finishes with a guided tasting where mentors unpack aroma, texture and provenance. All guests receive $20 off any 700ml bottle purchased the day of the tour, so you can bring a tangible souvenir home.

Practical notes: tours are for guests 18 and over and are best booked in advance; groups are kept small for an intimate experience. If plans change you can cancel for a full refund up to 24 hours before the tour. Wear sensible shoes for walking on concrete and non-slip surfaces, and bring a camera—there's copper gleam and barrel geometry worth photographing.

Beyond the tasting, pair the visit with a loop through Sydenham's streets to see repurposed industrial buildings or combine it with a food stop in central Christchurch. The Spirits Workshop offers a concise, sensory-focused window into New Zealand's growing distilling scene—perfect for curious travelers, craft-beer drinkers moving into spirits, and anyone who appreciates how technique, time and place shape flavor.

Expect an intimate group size (the listed group size is 2), close-up explanations of how cut points are chosen during distillation, and hands-on demonstrations when possible. The tasting is paced to highlight nose, palate and finish while staff explain sourcing of local grains and imported botanicals. Remember the legal requirement: guests must be at least 18 years old to attend. If you're buying bottles, ask about shipping options or how to store your purchase for cellar development at home.
