A minivan pulls out of Saigon before dawn and the road slinks through rubber and cashew plantations until the pavement narrows and the hills of the Central Highlands rise. On the first pedal stroke riders leave traffic behind and enter a landscape of coffee bushes, tea terraces and small farms where rubber-tapping is still done by hand. Morning mist clings to stream-side restaurants at Thác Ba Giọt; later a short kayak through mangroves reveals tiny red crabs clambering along exposed roots.
